Sunflower Chives Spread
Since this spread lasts at least 5 days in the fridge, it's a great staple for sandwiches, baguettes, etc.
INGREDIENTS
4 tbsp chopped chives
1 small white onion
120g sunflower seeds
55ml sunflower seed oil
1 tbsp dried mixed herbs
¼ tsp nutmeg
Juice of ¼ lemon
Salt and pepper to taste
Optional: 1 clove of garlic
DIRECTIONS
In a food processor or high speed blender, add sunflower seeds, oil, and the spices.
Pour in enough water for everything to be covered, and blend until a creamy but slightly chunky paste forms.
Chop up the chives and add to the mix with a finely chopped onion.
Let set for about 20 minutes before serving.
